GLUTEN FREE RHUBARB CRUMBLE

Ingredients

2 cups chopped rhubarb

2 cups organic strawberries

1 cup organic blueberries

2 oranges

3 tablespoons arrowroot starch

Filtered water

1 + 1/2 cups almond meal

1/2 cup shredded coconut

1/2 finely chopped walnuts

1/3 cup coconut sugar

1 tsp cinnamon

1/3 cup coconut oil

1/2 tps salt

1 tsp vanilla extract

METHOD

  1. Preheat oven to 180 degrees.

  2. In a saucepan add the rhubarb, berries and the juice + zest of your oranges.

  3. Add 1/2 cup water to the saucepan and bring to the boil. Once boiled, reduce to a simmer with a lid on. Simmer until rhubarb is soft and stringy.

  4. In a bowl, mix all other ingredients with your hands. This will form crumble like clumps that will go on top of your rhubarb mix.

  5. Add your cooked fruit purée to a baking dish of your choice. Spread the crumble mixture on top and bake until golden.

  6. Serve with your favourite ice cream, we recommend the COYO vanilla ice cream ~
