Carrot Cake Pancakes

Gluten free, Paleo, Lactose Free, SIBO friendly, low FODMAP

Makes 5- 6 pancakes

Ingredients

2 grated carrots on the fine grate setting

3/4 cup almond meal 

½ cup buckwheat / spelt flour 

3 tablespoons green stevia leaf powder **

1/2 tsp gluten free baking powder 

1 egg 

1 tsp cinnamon 

1 tsp nutmeg 

1/2 tsp turmeric

½ cup coconut oil 

1/ 4 cup rice / coconut / almond milk

Crack of salt 

Method

Mix grated carrot, egg, coconut oil and milk

Add dry ingredients and mix

Fry in rounds on a pan either in ghee, grass-fed butter or coconut oil

Top with coconut yoghurt, honey, berries, or toppings of your choice ~
